Springfield's second Beef-A-Roo restaurant is here.
Rockford, Illinois-based Beef-A-Roo Inc. announced in a news release that tomorrow is the scheduled grand opening for the eatery at 3312 E. Chestnut Expressway.
"Beef-A-Roo is committed to customer experience and menu excellence as it expands the brand into key markets across the Midwest and Southeast," officials said in the release.
Beef-a-Roo has a menu that includes burgers, roast beef sandwiches, cheddar fries, salads, soups, baked potatoes and wraps.
The East Chestnut restaurant replaces a shuttered Hardee’s near U.S. Highway 65.
Beef-a-Roo's first Springfield restaurant opened at 1411 W. Kearney St. in February. That eatery replaced a former Dairy Queen and marked the first shop outside of Illinois for the family-owned fast-casual restaurant chain, according to past reporting.
Beef-a-Roo's website lists half a dozen restaurants on the way, including a location in Branson at 150 Cross Creek Blvd. Beef-a-Roo operates restaurants or has plans to open one in seven states.
