Rib Crib on April 18 moved a corporate-owned Springfield store to 1720 S. Campbell Ave., Bldg. Y, from just around the corner at 425 W. Formerly a Movie Gallery, the restaurant seats 198 and employs about 60 people. The Tulsa, Okla.-based franchisor operates locations in eight states. Six of the nine Missouri stores operate in the Springfield area, and the Campbell location offers catering services and such traditional Rib Crib eats as ribs, brisket and pulled pork. VIP Medical Services LLC
Dr. Billy Holt and his wife, Tonya, opened VIP Medical Services LLC on April 7 at 1500 W. State Highway J in Ozark. The 3,000-square-foot space facilitates a direct primary care medical practice that is membership-based or cash-pay only. Billy Holt said the structure allows the practice to minimize health care costs for its patients. Memberships cost $1,200 per year for a single person, $1,500 for a couple and $1,800 for a family. The practice offers services such as shots, simple lab tests, electrocardiograms, steroid injections and spinal manipulations. Holt said initial investments were around $75,000 for remodeling, lab equipment, electronic medical records and office equipment. The Holts lease the property from Mike Divine of Divine Veterinary Clinic for $2,500 a month. Tonya Holt works as a nurse, along with two other employees. Hours: 9 a.m.–5 p.m. Monday through Friday and on call 24/7 for members. Phone: (417) 485-4847.

Jimmy’s Egg
Oklahoma City-based Emerging Brands Inc. opened Jimmy’s Egg on Feb. 17 at 3315 E. Battlefield St. Organized under JE Battlefield Ops LLC, the restaurant seats 110 across 2,500 square feet in the former Tourist Information Center operated by the Springfield Convention & Visitors Bureau. Managing Partner Dan Calhoun said Jimmy’s Egg maintains a simple business philosophy. “There are not a lot of bells and whistles,” he said, citing Jimmy’s Egg effort to serve breakfast quickly and in a clean environment. Offering breakfast and lunch, signature items include the Big Jim Omelet comprising six eggs and 10 ingredients and Jimmy’s Garbage Breakfast, a mix of hash browns, grilled onions and peppers, sausage and two eggs with a side of biscuits and gravy or pancakes. Emerging Brands Inc. owns nine of 35 Jimmy’s Egg cafes in the mid- to south-central part of the country, said Calhoun, who works with 27 employees and previously managed Ruby Tuesdays in Republic. The Springfield space is leased from Gardner Capital Inc. for an undisclosed amount. The franchise has been around for 40 years. Hours: 6 a.m.–2 p.m. Sunday through Saturday. Phone: (417) 720-4436.
