Schuchmann Meat Co. adds shop near Bass Pro

The second of three shops planned this year for a Springfield meat company opened July 10 near the busy Sunshine Street and Campbell Avenue intersection.

Schuchmann Meat Co.’s newest store is operating at 520 W. University St., Ste. D, in a building formerly occupied by R&K Coins, which shuttered last year. The company, owned by husband and wife Chad and Julie Schuchmann, made its Queen City debut in February with a 1,500-square-foot shop at 4406 S. Campbell Ave., Ste. 100.

Julie Schuchmann said the new shop’s proximity to Bass Pro Shops and Wonders of Wildlife National Museum & Aquarium was a strong attraction to add a second location.

“It’s certainly a high-traffic area of town,” she said, noting the three-employee store also is near the University Heights and Phelps Grove neighborhoods. “Some people may not want to venture down Campbell to the south side.”

The company is on a five-year lease with Queen City Eye Care Center LLC owner Dr. Agnes Tran, Schuchmann said, declining to disclose the rate or startup costs for the 1,250-square-foot space. Queen City Eye Care is located next door to the shopping center.

Schuchmann Meat Co. handles custom butchering of beef and pork products for retail customers. That includes cuts of meat not commonly found in grocery stores, she said, such as beef ribs, hangar steak, lamb and veal chops. The shop also sells sauces, rubs and seasonings, as well as sides to complement the meats. Additionally, premade and customizable charcuterie boxes are available, she said.

“We’ve built a good model, so duplicating this wasn’t terribly hard,” Schuchmann said. “We know who we are, and we’ve put together a great selection of products.”

The quick growth this year for the company isn’t done yet, as a third butcher shop is expected to open by mid-August, Schuchmann said. The couple, who also own Schuchmann Meat Locker, a small meat processing plant in Conway, are in the process of renovating the shop at 1845 E. Turner St., Ste. A. They took over the lease of American Meat Co., which owner Jason Owen closed in April after more than 60 years in business, according to past Springfield Business Journal reporting. The couple also purchased Owen’s cooler and freezer equipment for an undisclosed price.
