Project description: This drive-thru coffee shop is the third Scooter’s Coffee franchise in the Springfield area. Co-owner Mary Rolf, a Nixa resident, is bringing a Scooter’s to her own city after opening two locations of the Omaha, Nebraska-based coffee company in Springfield: 3265 E. Sunshine St. and 2900 S. Campbell Ave. The Nixa location will be slightly larger at 629 feet instead of 450, but it remains a drive-thru-only establishment, according to architect Billy Kimmons, who explained the Scooter’s corporation has increased the size of its stores since the Springfield pair were constructed. Scooter’s menu includes hot and iced coffee drinks, smoothies and teas, breakfast burritos and sandwiches, cookies and muffins, all made quickly to allow customers to “scoot in and scoot out,” according to the company website.
