The owners of Everyday Thai LLC are planning a new concept in Springfield.
Steven Shutts said he and his wife, Thippawan, are targeting a January launch for Hot Bowl by Everyday Thai at 1301 E. Sunshine St., Unit 120. The eatery would be operated in addition to the couple's Everyday Thai restaurant at 220 W. Battlefield Road.
The 3,100-square-foot space, located in the development by Sagamore Hill Development Co. LLC across the street from Mercy Hospital Springfield at Sunshine Street and National Avenue, previously housed Neighbor’s Mill Bakery & Cafe.
Hot Bowl by Everyday Thai, which would be represented through signage of an elephant holding a bowl of noodles, is designed as a quick service restaurant with a focus on a traditional Thai dish called boat noodle soup, Shutts said. Curries and soups on Everyday Thai's menu would likely carry over to Hot Bowl by Everyday Thai, said Shutts, but some meals like stir-fry dishes would not.
"We're trying to attempt a quick-serve, counter-serve-type model similar to Qdoba or Chipotle," Shutts said. "The quick-serve style is real attractive there with the hospital personnel there that have limited lunch times. Hopefully, we'll be able to serve a lot of people real quickly with genuinely authentic, high-quality Thai food."
Estimating startup costs up to $70,000, Shutts said he and his wife signed a five-year lease for roughly $7,300 a month.
R.B. Murray Co. President Ross Murray said via email he served as the exclusive broker for the lease.
Neighbor’s Mill closed its restaurant at the Sagamore Hill space in 2022 after opening there in 2019, according to past Springfield Business Journal reporting. Neighbor’s Mill continues to operate its original Springfield restaurant at 1435 E. Independence St.
Everyday Thai first opened in Springfield at 2926 S. Campbell Ave. in the Imperial Plaza shopping center after the Shuttses operated a Thai food truck in the Fort Leonard Wood area. Everyday Thai relocated to 220 W. Battlefield Road, a former Newk’s Eatery, in 2020, according to past reporting.
