Coffee shop coming to Galloway Village

Springtown Coffee Co. is targeting an early March 2019 opening in Galloway Village.

Husband-and-wife business owners Justin and Allicyn Hollis said they plan to invest about $125,000 to open the shop at 3541 S. Lone Pine Ave., across the street from Sequiota Park. The previous home of Bee Natural Spa, the 900-square-foot space is between Trim Salon and dog training business Precious K9s in a building that houses personal care company 2B Well LLC on the top floor.

The Hollises saw a need for a dedicated coffee shop in Galloway Village, where a development boom is bringing mixed-use projects such as Galloway Creek and Quarry Town. Through their research, they found few options for coffee currently available.

“It’s a perfect place for a coffee shop,” Justin said. “The community there would value one.”

Allicyn said Springtown Coffee Co. is working with Battlefield-based Copper Canyon Coffee Roasters to source its products, with no plans to roast its own beans or wholesale starting out. Prior to opening the planned 50-seat shop, she said extensive renovations are needed, including demolition work.

The owners say the shop is a passion project, as Justin currently works as an engineer for SRC Electrical and Allicyn has a bachelor’s degree in social work with experience at Burrell Behavioral Health.

“Coffee has always been something we love and we’re passionate about,” Justin said. “”For her, it’s an experience that people want to go do together. For me, while it’s a visceral thing that people love, there’s a lot of science behind it. That allows me a venue to nerd out a little bit.”

The Hollises are negotiating a 10-year lease for undisclosed terms with building owners Jeff and Amy Haymes.
