Ruby’s Market sets opening date

Pyramid Foods set a March 15 opening date for its new natural foods concept dubbed Ruby’s Market.

Previously, the Price Cutter operator had an estimated opening date of mid-February or early March.

“We have a lot of people working hard to finish this project; it is really coming together,” said Rob Marsh, vice president of sales for Pyramid Foods, in a news release.

The 2843 E. Sunshine St. store will operate in a 54,000-square-foot former Dillons. The store was among four properties Price Cutter bought when Dillons left Springfield two years ago. The company already has opened Price Cutter stores at former Dillons at 1831 W. Kearney St. and 1260 St. Louis St., as well as a King Cash Saver at 1707 W. Battlefield Road.

Pyramid Foods handled construction work internally, with Arkifex Studios LLC serving as architect, structural engineering work by J&M Engineering LLC and mechanical, electrical and plumbing work by Ali Latifi. The Ruby’s branding was designed by Springfield-based The Alchemedia Project, a Marlin company.

On Feb. 10, the Missouri Job Center and Ozark Region Workforce Development Board worked with Pyramid Foods in a hiring event seeking more than 75 employees for Ruby’s Market.

Ruby’s features include:
    •    a Starbucks cafe;
    •    organic, natural and specialty grocery items;
    •    seasonally available local products from the likes of Circle B Ranch, Mexican Villa, Float Trip Pickles and Edgewood Creamery; and
    •    in-house pizza and an in-house bar.

Health food chain Lucky’s Market also has plans to open this year at Glenstone Marketplace, 3333 S. Glenstone Ave. The Boulder, Colorado-based natural foods store expects to open in the third or fourth quarter.
