Omaha, Neb.-based franchise Eat Fit Go Healthy Foods entered the Springfield market Dec. 31 with a store at 3233 E. Sunshine St., Ste. 104, in the Sidewalk Plaza. Franchisees David Baumann and D.J. Vokolek opened the store under Tell the Future LLC. Vokolek said Eat Fit Go offers a daily system for healthy meals created by chefs with ingredient labels affixed and without additives, preservatives, oil or butter. Springfield staff members make runs to a central kitchen in Kansas City to pick up the freshly made meals. Single meals average $8.50 apiece, he said, while a five-meal daily plan runs $150-$170 for five days. Vokolek, a former Missouri State University football defensive coordinator, handles operations locally, while Nebraskan Baumann also owns franchise rights in Lawrence and Manhattan, Kan. The Eat Fit Go concept launched in February and already has about a dozen stores in six states.

CMH El Dorado Springs Medical Center & Walk-In Clinic
Bolivar-based Citizens Memorial Hospital opened a 5,600-square-foot, $1 million medical center and walk-in clinic Jan. 3 at 322 E. Hospital Road in El Dorado Springs. Board-certified family medicine physicians Robert Ford Jr. and Bethany Dhondt and two family nurse practitioners lead the clinic, while Donna Griffin provides behavioral health counseling. With 12 exam rooms, hospital officials said medical center services include obstetrics, well-baby examinations, immunizations, gynecological exams, X-rays and laboratory work. Walk-in clinic staff provide daily care for sudden illnesses or injuries. Officials said Rogersville-based BP Builders LLC served as general contractor, and Springfield architects H Design Group designed the building built on CMH’s Community Springs long-term care campus.

Hula Hawaiian Kitchen
Pacific Islander Finnet Falig and business partner Tingting Liu opened Hula Hawaiian Kitchen on Dec. 10 in the Southgate Shopping Center, 1730 E. Republic Road. Building on Falig’s restaurant experience at Umi Sushi Bar and Outback Steakhouse and Liu’s work as an accountant, they invested $80,000 to equip and convert the space from Captain Craig’s Seafood Market. Liu, who’s originally from China, said the most popular dishes are the Loco Moco, served with prime beef, gravy and an egg sunny-side up; Huli Huli Chicken, with pineapple chunks; and the Mango Loco Chicken. Falig, the main chef, specializes in spam dishes and sushi. Entrees range $9-$13. The roughly 1,400-square-foot space seats up to 50. Hula Hawaiian Kitchen is in a five-year lease with Matt O’Reilly and Natural Bridge Investors LP for undisclosed terms, Liu said.
