Meet Ruby’s, Pyramid Foods’ new natural foods concept

Price Cutter operator Pyramid Foods has a name in place for its natural foods concept scheduled to open soon at a renovated former Dillons grocery store.

The company is targeting mid-February or early March to open Ruby’s Market at 2843 E. Sunshine St., said Pyramid Foods spokesman Charlie Dunn. The concept shares its name with Pyramid Foods President and CEO Erick Taylor’s grandmother Ruby, who lived in the Fair Grove area.

“She and her husband were farmers. She was a great cook, who enjoyed making homemade pies and was just known for having good food from her farmhouse kitchen,” Dunn said.

Pyramid Foods is seeking 70-plus employees led by store Director Jeff Moore to operate the 54,000-square-foot Ruby’s. Dunn declined to disclose the company’s investment in renovating the interior and exterior of the Dillons property Pyramid Foods bought when the chain left Springfield two years ago.

Pyramid Foods handled construction work internally, with Arkifex Studios LLC serving as architect, structural engineering work by J&M Engineering LLC and mechanical, electrical and plumbing work by Ali Latifi. The Ruby’s branding was designed by Springfield-based The Alchemedia Project.

“It’s really picked up over the last six months,” Dunn said of renovations.

Ruby’s store will include:
    •    a Starbucks cafe;
    •    a produce section where customers can choose their produce and have it freshly cut;
    •    organic, natural and specialty grocery items;
    •    seasonally available local products from the likes of Circle B Ranch, Mexican Villa, Float Trip Pickles and Edgewood Creamery;
    •    on-site butchers and a selection of smoked meats, as well as seafood flown in from the coasts;
    •    online shopping with delivery and drive-thru;
    •    in-house pizza via a brick oven; and
    •    an in-store bar.

The Sunshine Street location is the last of four Dillons properties Pyramid Foods purchased to reopen as new stores. The company opened Price Cutter stores at former Dillons at 1831 W. Kearney St. and 1260 St. Louis St., as well as a King Cash Saver at 1707 W. Battlefield Road, according to Springfield Business Journal archives.
